Lunch today is a chicken salad made with chicken that I'd frozen after cooking one of my recipes which I simply thawed in a pan and cooked it to crisp bits and added to a bowl of cherry tomatoes, avocado, cucumbers and onions with a dressing of balsamic vinegar, some salt and pepper.. with a few slices of focaccia on the side my meal is done and I'm happy.
