Rotten mood

I was in the mood for dosa today and so like every well meaning unbearable DIY aficionado out there I began last night with the making of batter which includes soaking rice for a few good hours with some lentils and then blending it to batter consistency and then letting it rise at room temperature weather to ferment, and that's exactly what I did.
This morning around 11 I blended and let the dosa batter be on its own undisturbed to ferment at its own pace and usually this step takes a goodly long time.
Sometimes even 10-12 hours and so imagine my chagrin when I checked to see the batter a few hours later, an hour ago that is to note that not only had it fermented beyond recognition but was on its way to dementia, that is to perhaps almost beginning to spoil.
To throw it in the fridge was for me the thing of a moment and now I'm upset because maybe there won't be any dosa tonight.
This is not only making me sad but angry as well.
