This mango laden spin on Caesar salad has probably been the highlight of this season for me.
I have made it with so many permutations, varied dressings, different proteins and each time it has come out exceptional.
Be it with miso smeared salmon or light balsamic vinaigrette or yogurt and herbs, there is no wrong way to make it just as long as there are mangoes to go with.
This here is in a mayonnaise and yogurt dressing with a few boiled eggs and that's about it.
It's hearty, it's beautiful, each mouthful a magnificent marvel.
