The thing about salad meals

Okay, this recipe has got me in its grip simply because well it's simple, full of flavours, light and delicious.
Oh it's spicy but then it's Thai in nature, well, not entirely because I am using Chinese style dried cured sausages here cut in fat coins along with tofu, crisp raw vegetables, peanuts, avocado to balance the heat with its balming calmness and a saucy dressing that elevates this somber looking rice salad to a flamboyant party in the mouth.
