Sichuanese (schezwan) cuisine is all about mouth numbing Sichuan peppers but if you add bird eye red chillies, dried red chillies and fat lacquer red chillies to the mix with iron grilled squid then it's not just tormentingly tortuous but tantalisingly tasteful as well..
The eyes weep, the face sweats and the mouth wants more more more.
